Ingredients

  • ½ cup extra-virgin olive oil
  • 1/2 cup maple sugar
  • 1 teaspoon vanilla extract
  • ¼ cup plus 1 tablespoon pumpkin puree
  • 1 ½ cups whole wheat pastry flour
  • ¼ teaspoon kosher salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ¼ teaspoon cloves
  • 1 teaspoon cinnamon
  • 1/2 cup semisweet chocolate chips

Instructions

  • Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • In a bowl, whisk together oil, sugar, and vanilla. Add puree and whisk till smooth.
  • In a separate bowl, add flour, salt, baking powder, baking soda, nutmeg, allspice, cloves, and cinnamon and mix together. Add dry ingredient to wet ingredients and mix together till well incorporated. Fold in chocolate chips.
  • Drop by rounded tablespoons onto prepared baking sheets. Slightly flatten out. Bake for 10 to 12 minutes until lightly brown.
  • Cool completely before eating.
