My Vegan Mug Brownie is chocolatey, fudgy and ready in less than 2 minutes! Made with ingredients which you probably already have in your pantry!

Ingredients

  • ¼ cup all-purpose or whole wheat pastry flour
  • 3 tablespoons granulated or maple sugar
  • 2 tablespoons cocoa powder
  • ½ teaspoon baking powder
  • 3 tablespoons unsweetened almond milk or any plant-based milk of choice
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon vanilla extract

Instructions

  • In a large mug (at least 10 ounces), add flour, sugar, cocoa, baking powder, almond milk, oil, and vanilla and mix together well.
  • Microwave on high for 1 minute (to keep more of a moist, “lava” texture at the bottom) to 90 seconds (cooked fully throughout so more “cakey” texture).
  • Note: garnish with powdered sugar if desired.
