Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment paper.
In a medium bowl, add eggs, ¼ teaspoon salt, and ¼ teaspoon pepper.
In a separate medium bowl, add panko and remaining ¼ teaspoon salt and ¼ teaspoon pepper.
Place a few cauliflower florets in the egg mixture then place in panko and cover completely.
Place each floret on the baking sheet. Repeat with remaining cauliflower. Bake for 30 minutes, turning halfway through cooking time. Remove from oven.
Place teriyaki sauce in a small bowl. Using a pastry brush, dip brush into teriyaki sauce and brush on each piece of cauliflower. Place back into oven for 5 minutes.
Garnish with sesame seeds and scallions.
