Ingredients

  • 2 cups cooked yellow split peas
  • 1 clove garlic
  • 1/4 cup tahini paste
  • Juice of 1/2 lemon
  • 1 teaspoon cumin
  • ½ teaspoon kosher salt
  • Pinch of cayenne
  • 1-3 tablespoons extra-virgin olive oil
  • Optional: garnish with sumac or chopped herbs like parsley

Instructions

  • In a food processor, add peas and garlic. Puree till mixture starts to break down and get smoother.
  • Add tahini, juice, cumin, salt, and cayenne and puree.
  • With motor running, add oil slowly until desired consistency reached.
  • Garnish with sumac and/or chopped herbs and serve with vegetables and pita bread.
