Ingredients

  • 1.5 pounds parsnip cut into 1-inch pieces
  • 2 pears unripe works best, cut into 1-inch pieces
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1 tablespoon white wine vinegar
  • 1 tablespoon parsley chopped

Instructions

  • Pre-heat oven to 425 degrees F. Line a baking sheet with foil or parchment paper.
  • Toss parsnips and pears with oil, salt, and pepper, and place on baking sheet in a single layer. Roast until golden brown, approximately 30 minutes, mixing halfway through cooking.
  • Toss with vinegar. Garnish with parsley.
