Peaches:
- ¼ cup honey
- ¼ cup fresh squeezed orange juice
- 4 large peaches halved and pitted
Nut crumble:
- 1 ½ teaspoon canola or sunflower oil
- ¼ cup whole wheat pastry flour
- 1 tablespoon maple sugar
- 1 tablespoon coarsely chopped nuts your choice, I like almonds or walnuts
Preheat oven to 400 degrees F. Combine honey and juice in a square baking dish then place peaches, cut side down, in the dish. Roast approximately 15 minutes then turn peaches over and roast an additional 10-15 minutes until tender and juicy. In a bowl, combine nut crumble ingredients and mix well. Spread on a small baking sheet and bake, tossing once, until golden brown, approximately 5 minutes. Set aside until peaches have finished cooking. Serve peaches drizzled with pan juices and topped with nut crumble and a dollop of yogurt.
