Ingredients

  • 1 jar 12 ounces roasted red peppers, diced small
  • 1 tomato cored, seeded, and diced small
  • ½ red onion diced small
  • 1 clove garlic grated
  • 3 tablespoons chopped cilantro
  • Juice of 1 lime
  • 1 tablespoon extra-virgin olive oil
  • Optional: 1 jalapeno seeded and diced small
  • ½ teaspoon salt

Instructions

  • Place all ingredients in a bowl and mix together well.
