Ingredients

quinoa

water

teaspoon
kosher salt

cucumber
peeled and diced
1/2
cup
carrot
peeled and diced
1/4
cup
scallions
sliced

teaspoon
cilantro
minced

tablespoons
lemon juice
1/4
cup
olive oil

teaspoon
kosher salt

teaspoon
ground black pepper
Instructions
Place quinoa in salted water and bring to a boil. Reduce to a simmer and cover, cooking ~15 minutes. Cool.
Add remaining ingredients and mix.
