Ingredients

  • 1 cup pecans
  • 1 large egg beaten
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon extra-virgin olive oil
  • 4 ~1 pound boneless pork chops
  • ¼ cup Dijon mustard

Instructions

  • In a food processor, add pecans and process to crumbs. Place pecan crumbs on a plate.
  • Place beaten egg in a bowl. Add salt, pepper, and thyme and whisk together.
  • In a large cast iron skillet or oven-safe skillet over medium heat, add oil.
  • Spread Dijon over all sides of the pork.
  • Dip a pork chop into the egg then the pecans and place in the skillet. Repeat with each pork chop.
  • Cook for approximately 2 to 3 minutes on one side, till golden brown, then flip over and cook for 2 to 3 minutes. Allow to rest on a cutting board for 10 minutes.
  • For thicker pork chops (1 to 2 inches thick): Preheat oven to 350 degrees F. In step 6, flip over and immediately place in the oven for 3 to 4 minutes. Pull out when pork reaches 135 degrees F. Remove pork from skillet and allow to rest on a cutting board for 10 minutes.
