Preheat oven to 300°F and line a baking sheet with parchment paper.
In a large bowl, combine the melted peanut butter, maple syrup/honey, and oil.
Add the oats, nuts, coconut flakes, and salt. Mix well - you want to make sure everything is evenly coated.
Scoop the granola onto the baking sheet and spread in a single layer. (Note: press the mixture into a 1/4" thick layer IF you would like to make large clumps of granola.)
Bake for 15 minutes and use a spatula or spoon to gently break the granola apart and mix around. Then bake for 15-30 minutes more, until golden brown.
Let cool completely before serving - granola won't be fully crunchy until it is cool.
