Ingredients

  • 1 cup all-purpose flour or whole wheat pastry flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 egg
  • 1 cup oat milk
  • 1 tablespoon granulated sugar or maple sugar
  • ½ teaspoon vanilla extract

Instructions

  • In a medium bowl, mix together flour, baking powder, and salt.
  • In a separate bowl, beat eggs. Add oat milk, sugar, and vanilla and whisk together.
  • Add wet ingredients to the dry ingredients and gently mix together. Be sure not to overmix. Allow batter to rest for about 10 minutes.
  • Heat a griddle or large skillet over medium heat and spray with oil spray or add some butter.
  • Scoop out ¼ cup batter onto griddle for each pancake and cook until bubbles appear on pancake, approximately 2 minutes. Flip pancakes and cook on the other side for one minute.
  • Serve with maple syrup and fresh fruit.

Note: to make vegan, swap egg for a chia egg (1 tablespoon chia + 2.5 tablespoons water)
