In a medium bowl, mix together flour, baking powder, and salt.
In a separate bowl, beat eggs. Add oat milk, sugar, and vanilla and whisk together.
Add wet ingredients to the dry ingredients and gently mix together. Be sure not to overmix. Allow batter to rest for about 10 minutes.
Heat a griddle or large skillet over medium heat and spray with oil spray or add some butter.
Scoop out ¼ cup batter onto griddle for each pancake and cook until bubbles appear on pancake, approximately 2 minutes. Flip pancakes and cook on the other side for one minute.
Serve with maple syrup and fresh fruit.
