Ingredients

  • 3 tablespoons chia seeds
  • Pinch of salt
  • 1 cup unsweetened almond milk cow’s milk, or other plant-based milk of choice
  • 1 teaspoon maple syrup or honey
  • ½ teaspoon vanilla extract
  • ½ cup diced mango
  • 2 tablespoons toasted coconut flakes

Instructions

  • Add chia seeds, salt, almond milk, maple syrup, and vanilla extract to a mason jar or air tight container. Mix well and feel free to close the lid and give it a shake.
  • Place container in the refrigerator and allow to set for at least 2 hours or overnight.
  • Open container and stir pudding. Top with mango and coconut.
