Ingredients

Meatballs:

  • 1 pound ground lamb
  • ¼ cup mint chopped
  • 1 clove garlic chopped
  • ¼ cup shallot chopped
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • ¼ teaspoon cinnamon
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • 1 egg beaten

Lemon Mint yogurt:

  • 1 cup plain greek yogurt
  • 2 tablespoons mint chopped
  • Pinch of salt
  • Pinch of ground black pepper
  • Zest of one lemon
  • Juice of one lemon to taste

Instructions

  • Preheat oven to 400 degrees F. Spray muffin tins with cooking spray. Combine meatball ingredients in a large bowl and mix thoroughly. Form into balls, each ~1 ounce (golf ball size) and place in muffin tin. Bake ~20-25 minutes until golden brown.
  • Meanwhile, combine yogurt ingredients in a bowl and mix well.
  • Serve meatballs and yogurt together.
