Preheat oven to 350 degrees F. Spray loaf pan with oil spray.
In a large bowl, whisk together oil, maple syrup, maple sugar, eggs, kefir, and vanilla. Mix/mash bananas into the wet mixture well.
In a bowl, mix baking soda, salt, cinnamon, and flour.
Add dry ingredients to wet ingredients and incorporate together. Do not overmix.
Pour mixture into loaf pan and place into oven. Cover with foil and bake for 65 minutes, removing foil halfway through. Banana Bread is done when toothpick inserted comes out clean.
Allow to cool 10 to 15 minutes prior to removing from loaf pan.
