Ingredients

  • 1 cup baby spinach
  • ½ cup tahini
  • 1/3 to ½ cup water
  • 2 scallions light green and white parts only, chopped
  • 2 tablespoons white wine vinegar
  • 1 clove garlic
  • ½ teaspoon kosher salt

Instructions

  • Place all ingredients in a food processor and blend until smooth.
  • Serve with cut up vegetables and pita bread
