Preheat oven to 400 degrees and grease muffin tins with spray olive oil. Place all meatball ingredients except ground turkey into a large bowl and mix thoroughly. Add ground turkey and incorporate mixture with hands.
Place ~1 ounce (golf ball size) meatball mixture in each muffin spot. Bake for 20-25 minutes until golden.
While meatballs bake, combine all ingredients for mint yogurt, mix together, and place in refrigerator to allow flavors to come together.
Serve meatballs with mint yogurt. Enjoy!
