Ingredients

  • 2 cups whole wheat pastry flour
  • ¼ cup ground flaxseeds or flax meal
  • ½ teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup extra-virgin olive oil or a neutral oil like vegetable or canola
  • ½ cup maple sugar or light brown sugar
  • 2 eggs beaten
  • ¼ cup cow’s milk or plant-based milk
  • 1 teaspoon vanilla extract
  • ¾ cup plain Greek yogurt
  • 1 cup frozen wild blueberries

Instructions

  • Preheat oven to 375 degrees F. Line a muffin tin with muffin liners.
  • In a medium bowl, add flour, flax, baking soda, baking powder, and salt and mix together well.
  • In a separate medium bowl, whisk together oil and sugar. Add eggs and milk and whisk together well. Add vanilla and yogurt and mix together to incorporate well.
  • Add dry ingredients to wet ingredients and mix together, being careful not to overmix the batter. Gently fold in blueberries.
  • Scoop a heaping ¼ cup of batter into each muffin tin.
  • Bake for 20 to 25 minutes until golden brown.
  • Cool on a rack before serving.
