Ingredients

  • 1 cup chickpea flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 2/3 cup coconut oil melted
  • 1/2 cup maple sugar
  • 1 egg beaten
  • 1 teaspoon vanilla extract
  • 1/4 cup semi-sweet dark chocolate chips

Instructions

  • Preheat oven to 350 degrees and line baking sheet with parchment paper.
  • In a bowl, mix together flour, cocoa powder, baking soda, and salt.
  • In a bowl, whisk together coconut oil, sugar, egg, and vanilla. Add dry ingredients into wet ingredients and combine. Mix in chocolate chips.
  • Optional: Refrigerate dough for one hour.
  • Roll dough into 2-inch balls and place on prepared baking sheet 2 inches apart. Flatten each ball slightly and place in oven.
  • Bake 10-12 minutes until edges are slightly golden brown. Allow to cool before eating.
