Ingredients

unsweetened dried cherries
1/2
orange or 1 clementine
peeled and quartered

tablespoons
honey
1
tablespoon
extra-virgin olive oil

cup
plain nonfat Greek yogurt

teaspoons
Dijon mustard

teaspoon
salt
½
teaspoon
ground black pepper

meat from a rotisserie chicken
skin removed and chopped into bite-sized pieces

celery
diced small

granny smith apple
diced

cup
chopped pecans
toasted

parsley

Instructions
In a food processor, add cherries, orange, honey, and oil. Pulse till combined but still chunky.
In a large bowl, add cherry mixture, yogurt, Dijon, salt, and pepper and mix well.
Add chicken, celery, apple, pecans, and parsley and mix together.
