In a bowl, add chicken, egg, sugar, sage, black pepper, cayenne pepper, and salt and mix together well with hands.
Divide mixture into 8 pieces, approximately 2 ounces each, and form into 2 – 2 ½ inch patties about ½ inch thick.
In a large skillet over medium heat, add oil. Add 4 sausage patties to skillet and cook until golden brown, 3 to 5 minutes, then flip over and cook on the other side an additional 3 to 5 minutes. Transfer to plate and cover with tented foil. Cook remaining patties.

Note: Raw sausage patties can be made ahead and refrigerated in an airtight container for one day or frozen up to one month. To cook frozen patties, follow same directions (#3) but cook 7 to 9 minutes per side.
