Ingredients

  • 1 tablespoon extra virgin olive oil
  • Pinch of salt
  • Pinch of black pepper
  • 1 teaspoon coriander
  • ½ pound carrots ribbons using a spiralizer/peeler, grated, or sliced into rounds
  • 1 tablespoon cilantro chopped

Instructions

  • Place oil, salt, pepper, and coriander in a large bowl and whisk to combine. Add carrots to bowl and mix well. Top with cilantro
