In a saucepan over medium heat, add 1 ½ cups water and bring to a boil.
Add oats, carrot, raisins, cinnamon, nutmeg, salt, and vanilla and stir together. Cover, decrease heat to low, and simmer for 15 to 20 minutes, till oats are cooked and desired consistency is reached.
Add maple syrup, walnuts, and cream cheese and mix well.
