Ingredients

  • 2 cups cooked beets quartered or sliced
  • 1 tablespoon extra virgin olive oil
  • 4 ounces smoked whitefish flaked
  • Sea salt
  • Ground black pepper
  • ¼ cup sour cream
  • 3 sprigs dill stemmed
  • 2 tablespoons pumpkin seeds toasted
  • Optional: crusty bread

Instructions

  • In a bowl, toss beets with oil.
  • Place beets on a serving platter. Place whitefish on the platter. Sprinkle with some sea salt and ground black pepper. Place dollops of sour cream on beets and whitefish. Add dill and pumpkin seeds.
  • Serve with crusty bread if desired.
