Apple and Raspberry Crumble

Ingredients

For the filling:

  • 1 bag 10-ounce frozen raspberries, thawed
  • 2 apples cored and diced
  • ½ cup honey
  • 1 teaspoon cinnamon
  • ¼ teaspoon kosher salt

For the crumble:

  • ½ cup whole wheat pastry flour
  • 2 tablespoons all-purpose flour
  • ¼ cup maple sugar
  • 1 cup rolled oats
  • ¼ teaspoon kosher salt
  • ½ teaspoon baking powder
  • ¼ teaspoon ground ginger
  • 1 cup chopped walnuts
  • ¼ cup 1/2 stick unsalted butter, diced
  • 1/3 cup milk

Instructions

  • Preheat oven to 400 degrees Fahrenheit. In a large bowl, combine raspberries, apples, honey, cinnamon, and salt and mix well. Pour into a 9x13 baking dish.
  • In a medium bowl, mix together both flours, maple sugar, oats, salt, baking powder, ground ginger, and walnuts. Add butter and, using hands, cut into mixture until small crumbs form. Add milk and continue to cut into mixture.
  • Sprinkle flour mixture over fruit. Bake till golden brown, approximately 20 minutes.
  • Serve hot, room temperature, or cold.
