Ingredients

  • ¾ cup almond flour
  • ¾ cup rolled oats
  • ¾ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 1/3 cup maple sugar
  • 1 egg beaten
  • 3 tablespoons nut butter
  • 2 tablespoons vegetable oil
  • 1/3 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  • In a large bowl, mix together almond flour, oats, baking powder, and salt.
  • In a separate bowl, whisk together sugar and egg till fully incorporated and gets a bit fluffy. Add nut butter and oil and continue to whisk.
  • Add dry ingredients to the wet ingredients and mix together. Fold in chocolate chips.
  • Place 2-tablespoon portions of dough on prepared baking sheet, approximately 1-inch apart.
  • Bake 15 minutes till edges are lightly golden. Remove and allow to cool.
