Whipped Ricotta Crostini is such an easy snack or appetizer to make that comes together in minutes. Plus, there are so many ways to customize it, you may never eat the version twice! 

With Thanksgiving just around the corner, I thought I would give you a super simple appetizer idea that guests will love! Even those who aren’t a fan of ricotta will love this! 

The secret is all in the whipping! It makes the mixture light and fluffy and has a totally different texture than what you would normally see in a lasagna.

Ingredients Needed 

  • ricotta
  • extra-virgin olive oil
  • salt
  • black pepper
  • thyme – feel free to add more of your favorite herbs or swap out the thyme to make your own combo. 
  • Baguette or sourdough bread – this type of bread works best because it  holds the toppings well without any sliding off. 

How to Make Ricotta Crostini 

Combine the ricotta, oil, salt and pepper in a bowl. Whisk by hand or use an electric mixer and beat until fluffy. 

Fold in the thyme and/or other herbs. 

Smear on toasted baguette slices and add your toppings. 

Crostini Topping Ideas 

  • Drizzle a little honey with sliced figs or peaches
  • Halved cherry tomatoes 
  • Roasted red pepper 
  • Grilled or roasted veggies 
  • Other fruit 
  • More fresh herbs
  • Pomegranate seeds and a few chopped nuts

 

Can You Make the Whipped Ricotta Ahead of Time? 

Absolutely! Making it ahead of time takes the stress out when it comes to serving during parties and during the holidays. 

Simply follow the instructions above for whipping, then store in an airtight container for up to 2 days. 

When you are ready to serve, let it sit at room temperature and re-whip for a few seconds if needed. 

If you are prepping the toppings in advance, store those in a separate container from the ricotta. 

Tips for Making 

  • Keep the bread slices around ½ inch thick. 
  • Full fat ricotta will be a little more light and airy compared to the kind with less fat content.
  • Use a serrated knife for cutting the bread. 
  • If you want a fancier look, transfer the whipped ricotta to a piping bag with your favorite tip and pipe it on the bread slices. 
  • Whipping the ricotta too fast may cause it to be a little runny. I like to use medium speed.

What’s the Difference Between Crostini and Bruschetta? 

The main difference is the type of bread that is used. Bruschetta is notoriously known for being made on a thicker piece of toast and topped with diced tomatoes and an Italian seasoning blend. Crostinis are smaller and usually have some type of spread accompanied by a variety of toppings.

Ingredients

  • 4 ounces ricotta
  • 1 teaspoon extra-virgin olive oil
  • ÂĽ teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon thyme or herbs of choice
  • Baguette or sourdough bread sliced and toasted

Optional toppings:

  • Honey and sliced figs or peaches
  • Halved cherry tomatoes
  • Roasted red pepper

Instructions

  • In a bowl, add ricotta, oil, salt, and pepper. Whisk by hand for approximately 2 minutes or in a stand mixer on medium speed till light and fluffy. Fold in thyme.
  • Serve with toasted baguette/bread and preferred toppings.
