Vegan Garlic Aioli

Vegan garlic aioli is protein-packed and is a great dipping sauce for veggies, fries, or sandwich spread. Made with only 5 ingredients and is ready in a matter of seconds!Ā 

One of the best things about making homemade aioli is that it only takes a few seconds and the fact you know exactly what’s in it. Some vegan aioli recipes you may see contain vegan mayo or cheese, but I am using a secret ingredient, tofu. Silken tofu is so creamy once you blend it and it adds protein.Ā 

This aioli is also nut-free (and gluten free), so no cashews needed and everyone can enjoy it, even those with allergies.Ā

What is Aioli?Ā 

Basically, aioli is a sauce that has been emulsified. Many restaurants get away with listing aioli on the menu, and it tastes like a fancy mayo with some spices added. In the Mediterranean culture, aioli was just oil and a ton of garlic mashed together but you don’t see that often.Ā 

Emulsion means taking to ingredients and combining them together that chemically don’t mix. You can think of water and oil, you know the oil just sits on top.Ā 

In my recipe, we are forcing the ingredients to combine using the acid in the apple cider vinegar so that it’s smooth and creamy once everything is blended.Ā

Ingredients Needed for Dairy Free Garlic Aioli

  • Silken tofu
  • Garlic cloves
  • Salt
  • Dry mustard
  • Apple cider vinegar
  • Chives – as a garnish

How to Make Vegan Garlic AioliĀ 

Add all of the ingredients into a blender or food processor and pulse until smooth. Sprinkle the chives on top for a garnish or mix them in.Ā 

Helpful Tips and StoringĀ 

  • Be sure to buy the right tofu, not all tofu is meant for blending.Ā 
  • For a spicier taste, dice chipotles or jalapenos. You can also sprinkle a little cayenne pepper in if you prefer.Ā 
  • If you like a more potent garlic taste, roast the cloves before making the sauce.Ā 
  • Keep the aioli in the fridge for a couple of days. If it starts to separate shake well or reblend to get it back to the right consistency.Ā 
  • Don’t have vinegar? Use lemon juice instead. It may change the taste a bit but the aioli will still be creamy.Ā 
  • Before serving, let it chill in the refrigerator so the flavors have time to marry.

Ingredients

  • ½ package 8 ounces silken tofu
  • 2 to 3 cloves garlic
  • ½ teaspoon kosher salt
  • ½ teaspoon dry mustard
  • ½ teaspoon apple cider vinegar
  • Optional: minced chives

Instructions

  • Add tofu, garlic, salt, mustard, and vinegar to a food processor or blender. Process till smooth.
  • Garnish with optional chives.
