How to Make Pistachio Cheese Dip

Place the softened cream cheese, grated cheddar, Greek yogurt, and milk into the bowl of a stand mixer fitted with the paddle attachment. Mix until smooth and well blended, scraping down the sides of the bowl as needed.

Add the dill, white wine vinegar, garlic powder, onion powder, salt, and pepper. Mix again until everything is fully incorporated.

Fold in the toasted pistachios using a spatula.Ā 

Transfer the dip to a serving bowl, cover, and refrigerate for at least one hour. Serve chilled with vegetables, crackers, or pita chips.

How to Toast PistachiosĀ 

Place the shelled pistachios in a dry skillet over medium heat. Cook for 3 to 5 minutes, stirring often, until they smell nutty and start to deepen in color. Remove from the heat right away and let them cool before folding them into the dip.Ā 

You can also toast them in the oven at 350 degrees for about 5 to 7 minutes. Be sure to check them halfway through to make sure they aren’t burning.Ā

Instructions

  • In a stand mixer using the paddle attachment, beat together the cream cheese, cheddar, yogurt, and milk.
  • Once smooth, add the dill, vinegar, garlic powder, onion powder, salt, and pepper and mix together.
  • Fold in pistachios.
  • Transfer to a serving dish, cover, and refrigerate for at least one hour before serving.
