Peanut Butter Granola

Peanut butter granola is slightly sweet, super crunchy, budget friendly to make, and can be used in many different recipes. This homemade granola is also vegan friendly.

Granola is one of those snacks that I could go crazy on! If I sit down with a bag, chances are I am going to eat way more than the serving size, because it’s just that delicious. 

I love making from scratch granola because I can easily customize the recipe using what I already have on hand. Not to mention, the prices of granola at the store have skyrocketed! So this version is very affordable to make right in your own kitchen. 

It’s a must have topping on cinnamon overnight oats and my famous banana overnight oats

Ingredients Needed 

  • peanut butter – needs to be melted beforehand.
  • maple syrup – adds just the right amount of sweetness.
  • extra-virgin olive oil – helps to crisp up the oats when baking. 
  • rolled oats – do not use instant or steel cut oats. 
  • chopped nuts and seeds – use your favorite variety. 
  • coconut – I used unsweetened. 
  • kosher salt – brings all of the flavors together. 

 

How to Make Homemade Peanut Butter Granola 

Line a baking sheet with parchment paper and preheat the oven to 300 degrees. 

Combine the melted peanut butter, oil, and maple syrup in a large mixing bowl. 

Stir in the oats, coconut, seeds, and salt so all of the ingredients are coated evenly. 

Transfer the granola to the prepared baking sheet and spread in an even layer. 

Bake for 15 minutes and use a spoon or spatula to break up the pieces. Continue baking for another 15-30 minutes until the peanut butter granola is golden brown. 

Allow it to cool completely before serving or storing. 

 

Tips for Making 

  • If you like larger clumps of granola, spread the mixture into the pan so it’s about ¼ inch thick. 
  • The granola will not be crunchy until it has completely cooled. 
  • Cooking the granola at a lower temperature compared to other baking recipes allows it to dry out just enough where it’s crispy when it finishes cooking.

Substitutions and Variations 

  • Nut butter – feel free to swap out the peanut butter for almond butter, cashew butter, or any of your other favorites. 
  • Honey – can be substituted for the maple syrup.
  • Coconut – we love the coconut flavor that the flakes add. However, you can omit them if you would like.

  • Breakfast Cereal: The most straightforward way to enjoy peanut butter granola is by stirring it into your favorite cereal with milk. 
  • Yogurt Parfait: Layer peanut butter granola with Greek yogurt and your choice of fresh fruit (like berries, bananas, or apples) to create a tasty parfait.
  • Smoothie Bowl: Top your favorite smoothie bowl with homemade granola for added crunch and flavor. 
  • Ice Cream Topping: Use it as a crunchy topping for your favorite ice cream or frozen yogurt.
  • Trail Mix: Mix peanut butter granola with a variety of nuts, dried fruits, and seeds to create a custom trail mix for an easy on-the-go snacking recipe.
  • Pancake/Waffle Topping: Sprinkle peanut butter granola on top of pancakes or waffles along with some maple syrup for added crunch and flavor.
  • Overnight Oats: Add this granola just before serving tahini or pear overnight oats

Ingredients

  • 2 tablespoons peanut butter melted
  • ¼ cup maple syrup
  • ¼ cup extra-virgin olive oil
  • 2 cups rolled oats
  • ½ cup chopped nuts and seeds any combination you like
  • ½ cup unsweetened coconut
  • ¼ teaspoon kosher salt

Instructions

  • Preheat oven to 300°F and line a baking sheet with parchment paper.
  • In a large bowl, combine the melted peanut butter, maple syrup/honey, and oil.
  • Add the oats, nuts, coconut flakes, and salt. Mix well - you want to make sure everything is evenly coated.
  • Scoop the granola onto the baking sheet and spread in a single layer. (Note: press the mixture into a 1/4" thick layer IF you would like to make large clumps of granola.)
  • Bake for 15 minutes and use a spatula or spoon to gently break the granola apart and mix around. Then bake for 15-30 minutes more, until golden brown.
  • Let cool completely before serving - granola won't be fully crunchy until it is cool.
