Oat Milk Pancakes are fluffy, easy to make, can be made vegan friendly, and are great to freeze for later! 

I love a nice short stack on Saturday mornings, especially ones that are fluffy like the restaurants, but without leaving the house. So the last time I started craving pancakes, all I had in the fridge was oat milk, so I decided to experiment. 

In today’s time, there are more and more options emerging in the milk department that are dairy free. Wondering what type of nutrition oat milk offers? Compared to nut based milks, oat milk has more protein. 

Each serving has a few more carbs compared to other milk, but the USDA says this is because of the fiber from the steel-cut oats that are used to make the milk. It’s an excellent alternative for those with allergies or who are looking for dairy alternatives. It also makes for a nice coffee creamer!

Ingredients Needed 

  • all-purpose flour or whole wheat pastry flour
  • baking powder
  • salt
  • egg
  • oat milk
  • granulated sugar or maple sugar
  • vanilla extract

 

How to Make Oat Milk Pancakes

 Mix together the flour, salt, and baking powder in a medium bowl. 

In a separate bowl, beat the egg, then whisk in the oat milk, vanilla, and sugar. 

Combine the wet ingredients with the dry and gently mix. DO NOT over-mix the batter. 

Let the batter rest for 10 minutes. 

Heat a skillet or griddle over medium heat and spray with oil or use butter. 

Pour ¼ cup of batter out for each pancake. Cook until bubbles appear, then flip and continue cooking for another minute. 

Serve with maple syrup and some fresh fruit! 

To Make These Vegan 

Swap the egg for a chia egg (1 tablespoon chia + 2.5 tablespoons water). Once you mix it together, let it sit for a couple of minutes before adding it to the batter.

How to Freeze Oat Milk Pancakes 

These make for a simple breakfast once you cook a batch and freeze them. After they have cooled completely, place them in a freezer bag. Freeze for up to one month. To reheat, microwave until warm or place each flapjack in the toaster for a couple of seconds.

To Make Pancake Cereal 

So this may be a thing of the past now, but a while ago mini pancake cereal was trending on TikTok and it’s such a good idea! Especially for those with younger children who always get super sticky. 

Place the pancake batter in a squeeze bottle and squeeze onto the griddle or skillet in the size of quarters. Once they have finished cooking, toss them in a bowl, add the syrup, and now you can dig in with a fork! 

This method takes a little extra time but, but would be nice for a special occasion. You can also freeze them for later as well.

Ingredients

Instructions

  • In a medium bowl, mix together flour, baking powder, and salt.
  • In a separate bowl, beat eggs. Add oat milk, sugar, and vanilla and whisk together.
  • Add wet ingredients to the dry ingredients and gently mix together. Be sure not to overmix. Allow batter to rest for about 10 minutes.
  • Heat a griddle or large skillet over medium heat and spray with oil spray or add some butter.
  • Scoop out ÂĽ cup batter onto griddle for each pancake and cook until bubbles appear on pancake, approximately 2 minutes. Flip pancakes and cook on the other side for one minute.
  • Serve with maple syrup and fresh fruit.
