This mango chia pudding is simple, delicious, and nutritious. Enjoy it as a dessert, breakfast, or snack. You’ll love it!

Chia seeds have the amazing ability to create a pudding or gelatin-type of texture when they’re mixed with liquid. Combining them with a plant-based milk is the key to making my mango chia pudding!

Chia seeds are packed with powerful nutrition. You may have seen them on a list of “super foods,” since they’re full of fiber, protein, and healthy fats. These tiny seeds can play a big role in our bodies, helping with brain, bone, and muscle health.

I make all types of chia pudding at home, but this mango version is one of my favorites. All you need is a handful of ingredients and you’ll have this scrumptious dish ready to go in no time!

Why We Love Mango Chia Pudding

  • Healthier. Making pudding with chia seeds is a super healthy alternative to a typical pudding that is made with whole milk dairy, eggs, and sugar. Both versions are delicious options, but mango chia pudding is chock full of nutrients and minimal added sugar!
  • Convenient. Making chia pudding is so simple! You just mix the ingredients together in an air tight container, pop it in the refrigerator, and a few hours later it’s ready to eat! Perfect to make right before bed – in the morning, breakfast is served!

What You Need to Make Mango Chia Pudding

Chia seeds

Salt

Unsweetened almond milk, cow’s milk, or other plant-based milk of choice

Maple syrup or honey

Vanilla extract

Mango – can be fresh or frozen

Coconut flakes – recommend unsweetened

How To Make Mango Chia Pudding

Place the chia, seeds, salt, almond milk, maple syrup, and vanilla in an air tight container and mix well.

Refrigerate for at least 2 hours or overnight. This allows time for the chia seeds and almond milk to create that pudding texture.

Stir pudding, add the mango and coconut toppings, and enjoy!

Is There a Certain Type of Mango I Should Use?

Fresh and frozen diced mango both work beautifully. If you choose frozen, simply leave some in the refrigerator to thaw alongside the chia pudding.

And don’t stop there! Swap out the mango or coconut for different toppings. Strawberries? Yes! Toasted walnuts? Absolutely! Whatever you like will taste delicious.

How Long Will Mango Chia Pudding last in the refrigerator?

You’re in luck! This delicious chia pudding can be stored in the refrigerator for up to one week. You may love it so much that you make enough to have some daily for breakfast, dessert, or as a snack!

Ingredients

  • 3 tablespoons chia seeds
  • Pinch of salt
  • 1 cup unsweetened almond milk cow’s milk, or other plant-based milk of choice
  • 1 teaspoon maple syrup or honey
  • ½ teaspoon vanilla extract
  • ½ cup diced mango
  • 2 tablespoons toasted coconut flakes

Instructions

  • Add chia seeds, salt, almond milk, maple syrup, and vanilla extract to a mason jar or air tight container. Mix well and feel free to close the lid and give it a shake.
  • Place container in the refrigerator and allow to set for at least 2 hours or overnight.
  • Open container and stir pudding. Top with mango and coconut.
