Glazed Apricots

Glazed apricots have just the right amount of sweetness and can be enjoyed as a simple side dish or delicious dessert! 

Many recipes for glazed apricots will call for dried fruit, but we are going to be using fresh! This is perfect if you have several left over from your fresh produce run, or just want to whip up something quick, simple, and fruity . 

The beautiful color also adds some flare to your holiday table spread. 

We are also going to make a topping using crème fraiche and heavy cream. For those who haven’t experimented with this combination before, you will love it!

What Is Crème Fraiche?

As you can tell, it originated in France and essentially was fresh cream left out to sour. You think it would spoil, but the bacteria actually prevented that and it made the mixture thicker. 

Today our dairy products are highly pasteurized, so if you were to make crème fraiche from scratch you would use buttermilk and yogurt. 

Ingredients Needed: 

  • crème fraiche
  • heavy cream
  • unsalted butter
  • Apricots
  • honey 

How to Make Glazed Apricots 

Start by getting your skillet hot. I like to use my cast iron for this recipe. 

Whisk the crème fraiche and cream together and set aside. 

Once the pan is hot, add the butter and let it melt. 

Place the halved apricots cut side down and cook for 3-4 minutes. 

Flip each one over and drizzle with honey. Continue cooking for a few more minutes until they are golden brown. 

Serve with the crème fraiche mixture on top.

Tips for Making 

  • Maple syrup could be used instead of honey. 
  • Glazed apricots are best when served right from the pan. 
  • If you want to skip the crème fraiche, the closest ingredient that could be swapped would be sour cream. If desired, you may want to add a little more sweetness. 
  • You can also use this same recipe for other fruits such as peaches. 

Can You Use Frozen Apricots? 

Fresh is my favorite. However, you can use frozen. Just be sure to let them thaw completely and remove as much as the liquid as possible before cooking.

Ingredients

  • ÂĽ cup crème fraiche
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • 4 apricots halved and pitted
  • 1 tablespoon honey

Instructions

  • In a bowl, whisk together crème fraiche and cream. Set aside.
  • In a skillet over medium-high heat, add butter. Once melted, add apricots to the pan, cut side down.
  • Cook till light golden brown then flip over. Drizzle with honey and cook 3 to 4 minutes.
  • Serve topped with crème fraiche mixture.
