Cucumber Melon Salad
Melon! Mint! Cucumber! Salads don’t have to be boring or follow basic rules. This Cucumber Melon Salad is a great way to liven up your fruit and vegetables. Another great Gellman Girls recipe that is super refreshing and a perfect dish to make with the kiddos.
How To Make Cucumber Melon Salad
First, use a melon baller and scoop out the inside of your honeydew and cantaloupe. If you don’t have a melon baller you can dice the melons into bite size pieces. The melon baller is a fun way to get the kids involved though!
Next place oil, salt, pepper and lime zest in a large bowl and mix to combine. Add the melon and cucumber to the bowl and mix well. Top with mint and enjoy your Cucumber Melon Salad!
All about Cucumbers
Cucumbers are crunchy, delicious, and have a mild flavor making them a great snack for kids! Cucumbers are very low in calories because they have such a high water-content. In fact, one cup of sliced cucumber has just 13 calories. They contain Vitamin C, an important nutrient for our immune systems. They are also a good source of Vitamin K which helps us heal faster.
When buying cucumbers in the store, you want to find some that have a bright green color, are firm all over, and do not have shriveled skin or ends.  You can store cucumbers in a plastic bag in the refrigerator for up to 1 week. Enjoy some yummy cucumbers in my Cucumber Melon Salad.
All About Melons
We use cantaloupe and honeydew in my cucumber melon salad recipe. Cantaloupe is also low in calories, providing just 53 calories in a one-cup serving. It is an excellent source of Vitamin A and Vitamin C. In fact, it provides 106% of the daily value of Vitamin A and 95% of Vitamin C! Vitamin A is an important nutrient for eyesight, and Vitamin C contributes to immune health. Cantaloupe also provides potassium and folate.
Honeydew has just 60 calories in a one-cup serving and provides a great source of Vitamin C and Potassium. Both Cantaloupe and Honeydew have a high water content, which helps you stay hydrated and contributes to healthy blood pressure!
When choosing melons in the store, look for those that have no bruising on their outer skin. You want them to be heavy for their size because that suggests they are juicy on the inside.
Uncut melons can be stored at room-temperature, but once you cut into them you should place them in the refrigerator. They will stay good in the refrigerator for about five days. You should also wash any dirt off the outside of your melon before cutting into it.
