Chocolate Baked Oats
Chocolate Baked Oats are easy to make which makes them great for holiday mornings and brunches! You only need a handful of ingredients that are probably already in your pantry!Â
Holiday mornings and brunches can be somewhat stressful when you are trying to juggle all of the things including feeding your hungry children and guests.Â
Even though some people may serve elaborate breakfast and brunch spreads, I like keeping it simple and nutritious. I mean you are going to need fuel for the rest of the day right?Â

Ingredients Needed for Chocolate Baked OatsÂ
old fashioned rolled oats – not steel cut and not the quick-cooking kind
baking powder
kosher salt
cocoa – you can also use cacao powder instead
Milk – use your favorite, dairy or plant-based milk will work
maple syrup – try to get pure maple syrup. Also when shopping know that the darker the syrup the more minerals it has.
eggs
vegetable oil
vanilla extract
chocolate chips – I am using semi-sweet
How to Make Chocolate Baked Oat BarsÂ
Prep a 9Ă—13 baking dish by using non-stick spray or lining it with parchment paper, then preheat the oven to 375 degrees.Â
Combine the oats, salt, cocoa (or cacao powder) in a large bowl and mix well.Â
In another bowl, whisk together the eggs, maple syrup, vanilla, and milk.Â
Combine the wet and dry ingredients and stir.Â
Pour the chocolate oat mixture into the baking dish and sprinkle with chocolate chips.Â
Bake until it’s golden brown for about 45 minutes.Â
Serve with your favorite toppings!Â

Is There a Vegan Version?
I haven’t tested a vegan version, but it wouldn’t take much to give it a try. Try swapping the eggs for flax or chia eggs and use plant-based milk. Be sure to let me know how it turns out!Â

Are Chocolate Baked Oats Gluten-Free?Â
The only ingredient that you would need to check the label on are the oats. Bob’s Red Mill has several different varieties that are gluten free that would be acceptable. Other than that, yes!Â

Hosting an Oat Breakfast BarÂ
This is great when there is an occasion like holiday mornings or brunches. You can make a big batch of baked oats then set out all of the toppings in different dishes and let your crowd make their own.Â
You can serve regular oatmeal as an option as well.Â
For beverages, serve a variety of juices and for my boozy friends, you can have a mimosa station too!Â

Chocolate Baked Oats
Ingredients
- 2 cups old fashioned rolled oats
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- ÂĽ cup cocoa or cacao powder
- 2 cups low fat cow’s milk or non dairy milk plain and unsweetened
- ÂĽ cup maple syrup
- 2 eggs beaten
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla extract
- ÂĽ cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375 degrees F. Spray a 9x13-inch baking dish with oil spray.
- In a large bowl, add oats, baking powder, salt, and cocoa and mix well.
- In a separate bowl, whisk together milk, maple syrup, eggs, oil, and vanilla.
- Add wet ingredients into dry ingredients and mix together. Pour mixture into prepared dish. Sprinkle chocolate chips on top.
- Bake 45 minutes until golden brown.
- Serve topped with plain yogurt and fresh berries.
