Chickpea Flour Cookies
Chickpeas are traditionally found in savory dishes, but have you ever used them in a dessert? If not, try them in my chickpea flour cookies! Thereās a catch, as you can tell from the recipe title. These cookies donāt use the chickpeas found in a can, rather they use chickpea flour, made from pulverized dried chickpeas. Chickpea flour can be made at home, but it is also readily available in supermarkets or online.
Back to the cookies, these chickpea flour cookies are so delicious and chocolatey, they are sure to be a crowd pleaser! They are perfect to make for any occasion, especially with Fatherās Day approaching, and the Fourth of July not too far away after that.
How to make chickpea flour
To make chickpea flour, it is super simple. Purchase dried chickpeas, place them in a food processor, and blend until you have fine particles resembling your typical all purpose flour. Thatās it! Then, store the flour in an airtight container.
The benefit of making chickpea flour at home also helps reduce food waste because you can make only as much as you need! Then, you can use the extra chickpeas to make my vegan chickpea salad or my baked falafel. Itās a win-win!
Benefits of the chickpea flour cookies
Chickpea flour is a great option to use because it is naturally gluten-free! Gluten is a protein found in wheat, when it is combined with water. Some people have trouble digesting gluten (gluten intolerance), while others have an immune-mediated response (Celiac disease). So, these cookies are perfect for anyone with, or without, the above conditions.
In addition to being gluten-free, these chickpea flour cookies can also be made vegan! To do this, omit the egg, and swap it for a chia egg or flax egg (1 tablespoon chia in 3 tablespoons water for either). The addition of the chia or flax will also add extra protein and omega-3 fatty acids, too!Ā
Another component to consider when making these chickpea flour cookies vegan, is making sure the chocolate chips are vegan! I love the Enjoy Life brand, but feel free to use your favorite vegan chocolate chips.
Health benefits
In one cup of chickpea flour, there are nearly 10 grams of fiber!1 This same one cup of chickpea flour is also an excellent source of thiamine, folate, iron, phosphorus, magnesium, copper AND manganese (phew!).2 Nutrient-packed is an understatement.Ā
While this is all important, what is more important is not to focus on the individual nutrients found in chickpea flour ā or any other food ā but to consume nutrient-rich foods in abundance. Swapping your traditional all purpose flour for nutrient-rich chickpea flour provides health benefits such as, reduction of developing chronic diseases, gut health benefits, bone health benefits, enzymatic reactions, and so much more!3, 4 Not to mention, this is all while enjoying a scrumptious cookie!Ā

Ingredients
- 1 cup chickpea flour
- ¼ cup unsweetened cocoa powder
- ½ teaspoon baking soda
- ¼ teaspoon kosher salt
- 2/3 cup coconut oil melted
- 1/2 cup maple sugar
- 1 egg beaten
- 1 teaspoon vanilla extract
- 1/4 cup semi-sweet dark chocolate chips
Instructions
- Preheat oven to 350 degrees and line baking sheet with parchment paper.
- In a bowl, mix together flour, cocoa powder, baking soda, and salt.
- In a bowl, whisk together coconut oil, sugar, egg, and vanilla. Add dry ingredients into wet ingredients and combine. Mix in chocolate chips.
- Optional: Refrigerate dough for one hour.
- Roll dough into 2-inch balls and place on prepared baking sheet 2 inches apart. Flatten each ball slightly and place in oven.
- Bake 10-12 minutes until edges are slightly golden brown. Allow to cool before eating.

I love the idea of this recipe, but my batter seemed very oily and loose. I added an extra 1/4 cup chickpea flour and they still spread a LOT (I did not refrigerate, perhaps that would have made a difference).
Yes, it is definitely a looser dough/batter. The optional refrigeration steps makes a huge difference since the cold will solidify that oil component. Definitely give it a try with that part next time and let me know how it goes!
i would like to make this recipe, would you suggest using applesauce instead of oil.
If not what other oil could I use ?

I have not tried it with applesauce and generally do not use that as a baking substitute, so I cannot tell you that they would come out ok. I would recommend sticking with oil. You can use any kind you like, including olive oil, canola oil, vegetable oil, or avocado oil. I also recommend that you include the optional time spent to firm up in the refrigerator if you prefer that the cookies do not spread. Enjoy!
