Chicken Breakfast Sausage patties are a delicious alternative to pork sausage and make for an easy breakfast! 

While most people love a good breakfast, bacon and pork sausage tend to be the star of the show. Today we are putting a twist on traditional sausage by using ground chicken instead! 

I am sure you are dying to know how to take ground chicken and turn it into a wonderful breakfast. The secret is in the seasonings! As a reminder for later, if you want to substitute ground chicken for beef and turkey in other recipes, it’s totally possible! 

Another reason I love using ground chicken in breakfast sausage patties is that it’s such a lean cut of meat, coming in at 99% fat free. This concept may not matter to many, but for those who are keeping an eye on their cholesterol and blood pressure, it makes total sense! 

Plus, using ground chicken is much cheaper than pre packaged breakfast sausage, and of course, has far fewer preservatives and additives.

Ingredients Needed for Chicken Breakfast Sausage

Ground chicken

egg

maple sugar 

dried sage

ground black pepper

cayenne pepper

kosher salt

canola or vegetable oil

 

How to Make Breakfast Sausage Using Ground Chicken 

Combine the spices, chicken, eggs, and sugar in a bowl large enough you can mix with your hands. 

 Pinch off about 2 ounces of the chicken sausage mixture at a time and form them into 2-inch patties that are a half-inch thick. 

Heat your skillet over medium heat then add the oil. Place the patties in and cook for 3-5 minutes on each side. Repeat in batches until all of the sausage patties are cooked. Cover the cooked patties with aluminum foil to keep them warm.

Tips for Making 

  • Try to make sure you don’t make the patties super thick so they cook evenly. 
  • A cast-iron pan works great for this recipe! 
  • For a spicier version add more cayenne pepper and red pepper flakes to the sausage mixture 
  • Serve with my Vegan Biscuits, sweet or savory your choice!

 

Can You Freeze Chicken Breakfast Sausage? 

You can either freeze the patties for later or store the raw uncooked patties in the fridge a day ahead of time. If you choose to freeze them, make the patties then place them in a freezer-safe bag in a single layer or separate the layers with parchment paper. 

To cook chicken sausage after it has been frozen, simply add the oil to your heated skillet and cook for 7 to 9 minutes on each side. 

Freezing the patties is a great idea for those who need a simple breakfast in the mornings and it eliminates the prep work the next time you are ready for some chicken sausage patties!

Ingredients

  • 1 pound chicken ground
  • 1 egg beaten
  • 1 teaspoon maple sugar
  • 1 teaspoon dried sage
  • ÂĽ teaspoon ground black pepper
  • ÂĽ teaspoon cayenne pepper
  • ½ teaspoon kosher salt
  • 1 tablespoon canola or vegetable oil

Instructions

  • In a bowl, add chicken, egg, sugar, sage, black pepper, cayenne pepper, and salt and mix together well with hands.
  • Divide mixture into 8 pieces, approximately 2 ounces each, and form into 2 – 2 ½ inch patties about ½ inch thick.
  • In a large skillet over medium heat, add oil. Add 4 sausage patties to skillet and cook until golden brown, 3 to 5 minutes, then flip over and cook on the other side an additional 3 to 5 minutes. Transfer to plate and cover with tented foil. Cook remaining patties.

Notes

Note: Raw sausage patties can be made ahead and refrigerated in an airtight container for one day or frozen up to one month. To cook frozen patties, follow same directions (#3) but cook 7 to 9 minutes per side.
