Springtime is the season for all things carrot cake, but let’s take it a step further and turn that into a healthy breakfast idea!
Why I Love Carrot Cake Porridge
Healthy: The oats are high in fiber and help you stay fuller for longer without spiking blood sugar levels. Sprinkling in walnuts adds a dose of healthy fats. We all know that carrots are a good antioxidant and a great source of beta carotene and Vitamin A – can’t we all use better eyesight?
Quick & Easy: You don’t need much time to make this nutritious breakfast.
Delicious: It literally tastes like real carrot cake!
Stay Full: As I mentioned, oats help you stay fuller for longer, so it reduces snacking and is a better alternative than store-bought breakfast cereal. 
Ingredients for Carrot Cake Oatmeal
- oats – I prefer to use steel cut oats
- Carrot – it needs to be grated finely. You can also use your food processor to go faster!
- Raisins – a carrot cake staple that also adds more fiber and iron
- Spices: cinnamon, nutmeg, salt
- vanilla extract – just to add a little more flavor
- maple syrup – adds a touch of sweetness and is a healthy alternative to regular sugars
- Walnuts – these are heart healthy and the added crunch is a bonus!
- cream cheese – because we are using water, this just helps to give the oatmeal and rich and creamy flavor and texture.
How to Make Carrot Cake Oat Porridge
Bring 1.5 cups of water to a boil in a saucepan over medium heat.
Once the water is boiling add the oats, grated carrot, spices, raisins, and vanilla. Stir and cover. Reduce the heat to a simmer for 15 to 20 minutes, or until the oats have reached the desired consistency.
Stir in the walnuts, maple syrup, and cream cheese. Mix well and serve!
Can You Make This Porridge Vegan Friendly?
Yes! Simply use a vegan cream cheese instead of one that is made from cow’s milk.

Is Carrot Cake Oatmeal Gluten Free?
The only ingredients that may have gluten would be the oats, but that is based on where they are processed. To ensure your carrot cake oatmeal is gluten free, read the label. Bob’s Red Mill and Quaker are great brands of oats to try.
Tips for Making the Best Carrot Cake Oats
- If you don’t have steel cut oats, you can swap them for rolled oats. Just decrease the cooking time.
- I don’t recommend using quick cooking oats, just because of how long it takes for the other ingredients to cook. You may end up with soggy porridge or a different consistency.
- You can use milk instead of water if you would like.
- The maple syrup can be swapped for honey if needed.
- Feel free to add other nuts such as pecans or almonds.
- Top with your favorites like a dollop of greek yogurt, a drizzle of nut or seed butter, or add a side of fresh berries.

Ingredients
- ½ cup steel cut oats
- 1 carrot grated
- 1/3 cup raisins
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon kosher salt
- ½ teaspoon vanilla extract
- 1 tablespoon maple syrup
- ¼ cup chopped walnuts
- 2 tablespoons cream cheese
Instructions
- In a saucepan over medium heat, add 1 ½ cups water and bring to a boil.
- Add oats, carrot, raisins, cinnamon, nutmeg, salt, and vanilla and stir together. Cover, decrease heat to low, and simmer for 15 to 20 minutes, till oats are cooked and desired consistency is reached.
- Add maple syrup, walnuts, and cream cheese and mix well.
