Burrata pesto toast is filled with light, refreshing flavors. With this easy recipe you’ll never eat boring toast again! 

When it comes to breakfast, toast can be bland and even a little dull if you don’t change up the ingredients. If you are one of those people who likes savory and a punch of flavor, you’ll love this burrata pesto combo. 

You’ll find that a traditional pesto recipe is best, but if you wanted to experiment you could also try Almond Pesto, Pistachio Pesto, Pumpkin Seed Pesto, or Nut Free Pesto with Kale.

What is Burrata Cheese? 

This cheese is an Italian favorite made from cow’s milk, but occasionally you may find it’s made with buffalo milk instead. 

It’s creamy, fresh, and it may remind you of mozzarella. When paired with tomatoes and basil, the cheese really brings the dish together, in our case, it’s toast! 

During the production process, it’s formed into a little pouch, filled with leftover mozzarella, and topped with cream. So really, it’s like the best of both worlds!

Ingredients Needed

  • cherry tomatoes
  • extra-virgin olive oil
  • Kosher salt
  • Ground black pepper
  • burrata
  • Pesto – you can use homemade pesto or store bought
  • basil
  • sourdough or whole grain bread

How to Make Burrata Pesto Toast 

Mix together the halved tomatoes, oil, salt, and pepper in a bowl. 

Toast the bread, add a layer of tomatoes, a dollop or two of burrata, a spoonful of pesto, and top with fresh basil. 

How to Cut Basil 

For this recipe, we are going to use the chiffonade technique. You can also use this knife cut with chopping kale for a garnish or salad. 

Roll the basil leaves together, then use a sharp knife to ribbon like pieces. 

Tips for Using Burrata

  • Once this cheese is opened or sliced, it’s best to eat it within the first 24 to 48 hours. As time goes on, it will begin to lose its creaminess. 
  • The inside will be much creamier if you allow it to come to room temperature before serving. 
  • Burrata is a great replacement for mozzarella and makes a wonderful caprese salad.
  • This cheese also works well on pizzas, bruschetta, on top of pasta, and tastes amazing with peaches, believe it or not! 

If you want to try more cheeses that may be unfamiliar to you, I highly recommend halloumi! You can toast it, broil it, bake and grill it, but it never melts like other cheeses. I have used it to make fries, fajitas, and burgers

Ingredients

  • 1 pint cherry tomatoes halved
  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon Ground black pepper
  • 4 ounces burrata
  • 2 tablespoons pesto*
  • ¼ cup basil chiffonade
  • 4 slices sourdough or whole grain bread toasted

Instructions

  • Directions:
  • On a platter or in a bowl, mix together tomatoes, oil, salt, and pepper.
  • Place burrata on the tomatoes as desired.
  • Drop teaspoonfuls of pesto on the tomatoes and garnish with basil.
  • Serve with toasted bread.
