If you are new around here, you will learn I am all about simple, healthy recipes. I see a TON of recipes floating around the web that should have a simple ingredient list, but use just about everything but the kitchen sink. 

Also, if you didn’t know, I am a Chef and certified in culinary nutrition on top of being a Registered Dietitian! This means that I actually know how ingredients interact with each other, why you use certain dry ingredients and binders, along with how food really affects your body. 

With that being said, cooking gluten free baked goods doesn’t have to be hard and you don’t have to spend hours reading labels. 

In terms of almond flour, I highly recommend Bob’s Red Mill! Along with all of their other products. They use simple ingredients and their labels are straight to the point, no greenwashing going on!

Ingredients for Almond Flour Peanut Butter Cookies

almond flour – As I mentioned earlier, Bob’s Red Mill is my favorite! 

baking soda

salt

egg

peanut butter – the natural creamy kind! The label should read peanuts and salt, that’s it! 

maple sugar – you will find me using this alot when it comes to sweener. It’s much healthier than granulated and the GI index is low compared to others! 

vanilla extract

How to Make Peanut Butter Cookies with Almond Flour

Preheat your oven and line your baking pan with parchment paper. 

In the first mixing bowl combine the almond flour, salt, and baking soda, then stir. 

In your other mixing bowl, beat the egg with a whisk, then add the peanut butter, sugar, and vanilla. Stir until it’s creamy. 

Pour the dry ingredients into the wet and stir until the cookie dough forms. 

Add the cookie dough in two tablespoon portions to your lined baking pan leaving about 1 inch in between each cookie. You can use a spoon or cookie scoop. 

Use a fork to make a crisscross pattern on the top of each cookie.

Bake for 10-12 minutes, and enjoy! 

Tips for Making and Storing

  • These cookies are not going to spread out that much, so make them the shape you want before placing them in the oven. 
  • You can wet your fork to make the criss cross marks easier. This helps with the dough to not stick as much.
  • Let the cookies cool completely or almost, so they don’t fall apart. 
  • Don’t overcook! Even if your cookies still look a little doughy, it’s fine! 
  • Store these peanut butter cookies in a container on the counter for up to 4 days. 
  • If you decide to freeze them, they will stay good for about 1 month.

Ingredients

  • 1 cup almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 1 egg beaten
  • ½ cup peanut butter
  • ¼ cup maple sugar
  • ½ teaspoon vanilla extract

Instructions

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • In a bowl, mix together almond flour, baking soda, and salt.
  • In a separate bowl, whisk together egg, peanut butter, sugar, and vanilla.
  • Add the dry ingredients to the wet ingredients and incorporate well.
  • Place 2-tablespoon portions of dough on prepared baking sheet, approximately 1-inch apart. Using a fork, press on each cookie to make a crisscross pattern.
  • Bake 10-12 minutes until lightly golden. Allow to cool before eating.

    Just made these and waiting for them to cool on rack…..they appear xactly like the picture – wow…….the only question I have is the total calories per cookie. I used a medium scoop n got 14 cookies…….yay!!!! My first time using almond flour – will be throwing out the reg bleached white flour – urgh – bad stuff!
