Whether you are gluten free by choice or have a sensitivity, sometimes it’s hard to adjust to making gluten free recipes, especially baked goods.
Almond flour isn’t suited for all baking recipes and cannot be swapped at a 1:1 ratio when comparing to all-purpose and wheat flours. If you do decide to start substituting almond flour, you will need to increase the amount of your binding agents such as eggs, butter, etc.

What’s the Difference Between Almond Meal and Almond Flour?
If you aren’t used to baking with almond flour, be sure to read the label well. Sometimes people use almond meal and almond flour interchangeably, but they are quite different.
Almond meal is processed with the almond skin on, which results in a coarser flour that can change the intended texture of baked goods.
Almond flour is actually made from blanched almonds where the skin is removed and ground down into a flour, similar to the texture you are used to seeing in other flour varieties.
How to Make Oatmeal Chocolate Chip Cookies with Almond Flour
Start by preheating your oven and lining a baking pan with parchment paper. If you don’t have parchment paper you can use a silicone baking mat or a little non-stick spray.
Grab a large mixing bowl and mix the almond flour, oats, baking powder, and salt.
In another mixing bowl, combine the sugar and egg by whisking until it’s fluffy. Then add the oil and nut butter of your choice and continue mixing.
Combine the wet ingredients into the dry and mix together well. Fold in your chocolate chips.
Using a spoon or cookie scoop, place 2 tablespoon portions of cookie dough on the baking sheet, leaving about 1 inch in between each cookie. Repeat until all of the cookie dough has been used.
Bake until the edges are lightly golden and they are almost ready to enjoy!
Remove them from the pan by placing them on a wire rack to finish cooling.
Storing Instructions
Store your cookies at room temperature in a covered container for up to 4 days. You can also freeze them for up to 1 month.

Almond Flour Oatmeal Chocolate Chip Cookies
Ingredients
- ¾ cup almond flour
- ¾ cup rolled oats
- ¾ teaspoon baking powder
- ¼ teaspoon kosher salt
- 1/3 cup maple sugar
- 1 egg beaten
- 3 tablespoons nut butter
- 2 tablespoons vegetable oil
- 1/3 cup chocolate chips
Instructions
- Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
- In a large bowl, mix together almond flour, oats, baking powder, and salt.
- In a separate bowl, whisk together sugar and egg till fully incorporated and gets a bit fluffy. Add nut butter and oil and continue to whisk.
- Add dry ingredients to the wet ingredients and mix together. Fold in chocolate chips.
- Place 2-tablespoon portions of dough on prepared baking sheet, approximately 1-inch apart.
- Bake 15 minutes till edges are lightly golden. Remove and allow to cool.
