Weekly Recipe Round-Up: Beet Cake

Ingredients
- 1 pound beet noodles or use a spiralizer and make your own out of a pound of beets - wash, peel, spiralize
- 3 eggs beaten
- 1/2 cup whole wheat breadcrumbs
- 1/2 cup walnuts chopped (optional)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup extra virgin olive oil
- 1/4 cup parsley minced
- sour cream or yogurt optional
Instructions
- Mix beets, eggs, breadcrumbs, walnuts, salt, and pepper in a bowl.
- Heat pan over medium-high heat, add 1/2 the oil, form three cakes with half the beet mixture and add to the pan. Cook ~4-5 minutes on each side and place on paper towel to drain excess oil. Repeat with remaining beet mixture.
- Sprinkle with parsley and serve with sour cream or yogurt.
