This summertime favorite is perfect for all your summer picnics and cookouts! My Watermelon Fruit Salad with Jalapeno and Lime is spicy and sweet, a perfect combination. Tons of Vitamin C and the sweet/spicy combination is amazing. And here’s the best part – mix any leftovers with vodka or gin and you’ve got a great adult bev! You’re welcome.

Ingredients

  • 1 seedless watermelon ~3 pounds, rind removed and cubed in bite-sized pieces
  • 1 jalapeno minced
  • 1 scallion thinly sliced
  • 1/3 cup cilantro minced
  • Zest of 1 lime
  • Juice of 1 lime
  • Pinch of kosher salt or your favorite sea salt

Instructions

  • Toss all ingredients together in a large bowl and serve.
