Peaches
One serving of peaches, which is 1/2 cup of canned peaches or one medium peach, has 2 grams of fiber, is a good source of vitamin A and an excellent source of vitamin C. Fiber helps keep you full while vitamin A works to keep our eyes working well and vitamin C keeps our immunity strong.Ā
My go-to peach for this recipe is canned California Cling Peaches because theyāre always in season and they stay in your pantry year-round! California Cling Peaches are picked at peak ripeness and always taste like summer. But if peaches arenāt your thing, you can always opt for another stone fruit like plums or apricots or even try apples or pears.Ā
Oats
Oats are part of our peach crumble topping and one of the most nutrient-dense foods we can eat regularly. This means that every calorie of oats we eat contains a ton of nutrients, like iron, zinc, B-vitamins, and more! They are also loaded with fiber and have been proven to lower LDL cholesterol (ābadā cholesterol) and total cholesterol, thereby reducing the risk of heart disease (1).

Ingredients
Peach Filling:
- 2 cans 14.5 ounces California Cling peaches, drained
- 1/4 cup Maple sugar
- 1 tablespoon Lemon juice
- 1 tablespoon corn starch
- ¼ teaspoon kosher salt
- ½ teaspoon Cinnamon
- Optional: ½ cup blueberries
Crumble topping:
- 1/2 cup whole wheat or all purpose flour
- 1/4 cup Maple sugar
- ¾ cup Walnuts chopped
- ½ cup rolled Oats
- ½ teaspoon Cinnamon
- ½ teaspoon kosher Salt
- 6 tablespoons unsalted Butter cut into small dice
Instructions
- Preheat oven to 375 degrees F
- In a bowl, mix together peach filling: peaches, maple sugar, lemon juice, corn starch, salt, and cinnamon. Place mixture in a round, square, or rectangular baking dish.
- In a separate bowl, mix together crumble topping: flour, maple sugar, walnuts, oats, cinnamon, salt, and butter. Using your hands, make sure the butter is incorporated well into the mixture. Place crumble topping on top of the peach filling in the baking dish.
- Bake 30 to 40 minutes till bubbling and golden brown.
