Halloumi Fajitas are cheesy and packed full of the traditional fajita flavors and filled with protein! Ready in just 15 minutes, it’s the perfect quick and easy meal! 

These vegetarian fajitas are absolutely amazing and have a ton of flavor from the halloumi. You may have tasted this type of cheese before if you have eaten Mediterranean or Greek food. 

I like to say that it is similar to mozzarella, but a little bit saltier and much firmer. Hence the reason we can cook it without it completed melting apart. The fact that you can cook halloumi in so many ways is the exciting part! Remember to add that to your list the next time you grill! 

Because the halloumi is high in protein, you stay full for longer! 

May I suggest that this recipe is amazing if you wanted to host a fajita bar, and not to mention affordable! Simply follow the instructions then add the toppings to individual bowls and allow the guests to dig in!

What You Need for Halloumi Fajitas

Oil – you can use canola or vegetable

red onion

bell pepper

chili powder

ground cumin

salt

ground black pepper

halloumi – make sure you slice it thin

Tortillas – flour or corn will work, your choice!

Optional: chopped cilantro, baby spinach, sour cream, diced avocado, 

 

How to make Vegetarian Fajitas with Halloumi Cheese

Before you get started, let’s do the prep work first! Julienne your onion and peppers. Then slice the halloumi. 

While you are prepping, go ahead and warm your skillet up. 

Once the pan is hot, add the oil. Drop in the onions and peppers, stirring occasionally until they start to brown. 

Add the salt, pepper, cumin, and chili powder and continue cooking for a few more minutes. 

Transfer the cooked veggies to a plate and set to the side.

Place the thinly sliced halloumi in the skillet and cook until it’s golden brown. It will take about 2 to 3 minutes. 

Once it’s done, add the vegetables back to the skillet and toss them together. 

Warm your tortillas and you are ready to serve!

Can You Eat Halloumi Raw? 

Most of the time halloumi is eaten after it has been cooked because that is what is unique about it! Leave the other cheeses to be eaten raw! 

Fajita Variations 

You can add whatever veggies you would like! This recipe is very forgiving, so I always say the more veggies the better! 

Change it up by swapping the chicken for steak or shrimp!

Tips for Making 

  • Be sure your pan is HOT before you add the oil.

Halloumi Fajitas are a great one-pan meal, but if you love side dishes you can pair them with beans, rice, or cauliflower rice for a lower-carb option!

Ingredients

  • 1 tablespoon canola or vegetable oil
  • 1 red onion sliced julienne
  • 1 bell pepper sliced julienne
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 8 ounces halloumi sliced into thin pieces
  • 4 corn or flour tortillas
  • Optional: chopped cilantro baby spinach, sour cream, diced avocado,

Instructions

  • In a large skillet over medium-high heat, add oil. Onion and pepper and cook, stirring, till starting to brown. Add chili powder, cumin, salt, and pepper and toss, continuing to cook 3 to 5 minutes. Remove vegetables from pan and set aside.
  • Return skillet to medium-high heat and add halloumi. Cook 2 to 3 minutes each side till golden brown.
  • Add vegetable mixture back to the pan and toss everything together.
  • Serve with tortillas, cilantro, spinach, sour cream, and avocado.
