Greek Burger

I love a good Greek Salad, but sometimes I want more than a salad. Why not a Greek burger? And forget about the bun on this one! Don’t need it with this burger/salad mix turned into a healthy favorite, which is delicious on a bed of greens and topped with a dollop of yogurt. Ground chicken and ground turkey both work well in this recipe so feel free to swap out.

How To Make My Greek Burger

Combine grated zucchini, ground chicken/turkey, whole wheat breadcrumbs, garlic, onion, spices, and feta cheese in a bowl and mix together.  Separate mixture into 4 patties.  Next, heat up a grill pan and spray with olive oil.  Grill the patties for 4-5 minutes over medium heat, flip and cook 4-5 minutes on the other side.  To ensure your Greek Burger cooks through, you can add an ounce of water and cover after flipping.  This will allow the patties to steam and cook through without burning the outside!

Grated Zucchini in a Burger??

Yes, you read that right!  I love adding grated vegetables to my burgers.  Zucchini is a good source of fiber, Vitamins A, C, and Potassium.  These nutrients contribute to healthy vision, a strong immune system, and heart health.

By shredding the zucchini and mixing it in with the ground chicken, you get all the health benefits, it adds moisture and flavor to the burger, and the kiddos won’t even know it’s there.  Talk about a win-win! You can grate other vegetables like carrots into your burgers as well.  Try sneaking some veggies into your Greek Burger and see if anyone notices!

Ditch the Bun

People often think of burgers as an unhealthy meal.  These Greek Burgers are packed full of nutrients and can fit into any healthy diet!  Since they have such a good flavor on their own, I find that you don’t need to eat them with a bun.  You can enjoy your Greek Burger topped with creamy Greek yogurt and served over some mixed greens.  This way you get the added protein and probiotics from the yogurt plus the additional nutrients and health benefits of leafy greens.  Trust me, you won’t miss that bun!

Ground Chicken Nutrition

Chicken is a healthy choice to use in my Greek Burger.  Chicken is a high-quality protein that provides all 9 essential amino acids we need to get from our diets.  Amino acids are the building blocks of protein, which makes up our muscles, skin, hair, and nails.

Handling Raw Chicken

When working with raw chicken, you want to be sure to not cross-contaminate.  This is to help prevent the spread of salmonella.  Make sure you wash your hands after touching raw chicken and before picking up any other utensils or food.  Also remember to thoroughly wash your cutting board and knife before moving on to cut other foods, especially foods that will be eaten raw!  Cooking destroys salmonella, so you want to make sure your chicken burgers are fully cooked.  To check doneness, make sure the chicken is no longer pink in the middle and if you want to use a thermometer, it should read 165 degrees F.

Ingredients

  • 1 zucchini grated
  • 1 pound ground chicken
  • ÂĽ cup whole wheat breadcrumbs
  • 1 clove garlic minced
  • 1/4 red onion minced
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • 1/8 teaspoon ground pepper
  • 1/3 cup crumbled feta cheese

Instructions

  • Place all ingredients into bowl and mix together well.
  • Heat up a grill pan and spray with olive oil. Split mixture into 4 patties, grill 4-5 minutes on medium heat, flip and cook 4-5 minutes on other side. To ensure cooking, can add an ounce of water and cover after flipping.
