Citrus Squeezing Tips!
Fresh citrus juice—grapefruit, lime, lemon, and orange—adds a flavorful boost to SO many dishes from my Grapefruit Martini to salad dressings, meat marinades and on and on! The first step is selecting fresh and plump citrus.
After citrus sits on the grocery shelves or in your refrigerator for an extended period of time, they dry out. Squeezing old citrus leads to a MUCH smaller amount of juice. To avoid this, select citrus that is heavy for it’s size, this tells you that it has a high juice content! This is the same I give for selecting melons and winter squash.
You should also look for citrus that is free of wrinkles and appears plump, another sign for a high juice content. Next, we want to roll the grapefruit and other citrus on the cutting board, before we cut into it. This helps breakdown the cell walls of our citrus leading to a higher juice yield.
For lemons and limes you may have a tool to squeeze the juice, which works great and I highly recommend using! This is especially helpful for lemons, which often have a high seed content. This tool will catch the seeds so they will not end up in the Grapefruit Martini.
Grapefruit’s are large, and will require more manual effort to juice than other citrus to add to my Grapefruit Martini. First, roll the grapefruit and cut in half. I find squeezing it into a bowl does not release enough juice and I will use a fork or small ramekin to help coax the juice into the bowl.
Each grapefruit will provide about 6 ounces of fresh juice, depending on the size and freshness, which is enough for about two Grapefruit Martini’s. You will need one grapefruit for every two Grapefruit Martini’s that you plan to make. In a pinch, you may be able to find fresh grapefruit juice at your grocer.
Measuring It Out
If you prefer to cook and bake without measuring, then go right ahead and do the same with my Grapefruit Martini! Just make sure to follow the correct ratio of ingredients in the recipe. Alternatively, you can measure everything out with a shot glass and tablespoons. For reference, a single shot is 1.5 ounces and a tablespoon is equal to a half ounce.
If you are entertaining a crowd you can easily double, triple, quadruple and so on to make a big batch of Grapefruit Martini! Just make sure to wait to add the ice until you are ready to shake and serve the Grapefruit Martini. Otherwise it will get too watered down.
Mix that Martini!
After squeezing the grapefruit and lemon and adding the rest of the ingredients, we need to shake, shake, shake that shaker! If mixing cocktails is not part of your repertoire, you probably do not have a shaker, but they are worth the investment! A good option is this simple 24 ounce shaker.
Shaking is key to a good Grapefruit Martini, mixing with a straw or other utensil will not evenly distribute the alcohol and other ingredients. Shaking a cocktail does a much better job at evenly distributing the ingredients and making it ice cold. The citrus in my Grapefruit Martini will also lend a bit of froth at the top that is delicious and pretty, which you will not get from stirring.
If you do not have an official cocktail shaker, you can improvise to make my Grapefruit Martini. My favorite mixing method without a shaker, is using a quart mason jar, making sure to securely tighten the lid and leave an inch or two of headspace to allow for adequate shaking space.
With a shaker, there is a built-in strainer that will keep the ice and most of the watermelon pulp out of your martini glass. If you are using a mason jar or another method, I recommend pouring the cocktail through a strainer or colander before serving.
