Whole Baked Eggplant
Looking for a new way to cook eggplant? Bake it whole! That’s right, let’s make a whole baked eggplant. This delicious, easy recipe has an endless variety of uses once it’s complete. For example, eat the eggplant whole or scoop out the flesh and serve as a dip with your favorite bread. Feel free to mix in your favorite seasonings, herbs, and spices. And why not add in some goat or feta cheese as well? Amazing and yummy ????
How To Make a Whole Baked Eggplant
Before you heat up your oven, arrange a rack in the middle of the oven. This will allow your eggplant to cook evenly. Next preheat the oven to 350 degrees F.
Rinse and thoroughly dry your eggplant. Place it directly on the middle rack and bake until it is tender and the skin is wrinkly. This will take about an hour.
Finally use tongs to remove the eggplant to a cutting board or wire rack to let cool. Once it is cool enough, cut the eggplant in half and scoop out the flesh. You now have a Whole Baked Eggplant—Delicious!

Selection:
Find an eggplant that has a bright purple color, is free of bruises and discolorations, and is heavy for its size. More tender eggplants are smaller and more slender.
Storage:
If you don’t want to use your eggplant immediately after purchasing, you can store your eggplant in the crisper drawer of your refrigerator! It will stay good for 5-7 days.
